After a long work week, nothing rings in Friday night quite like PIZZA. Growing up, Friday night was often my family’s designated pizza night, and this is definitely a tradition I’m ready to re-adopt as an adult.

Even with a gluten-sensitivity, I’ve found creative ways to enjoy one of life’s greatest culinary gifts (pizza, duh), and today I want to share one of my favorites with you.

This recipe is not only gluten-free, vegetarian, and low cal, but it’s also super simple to whip up after work, calling for only a few minutes of prep and a moderate cook time (depending on how crispy you like your crust).

Gluten-free Garbanzo Bean Crust
  1. Preheat oven to 425F and grease a baking sheet with a tsp of avocado oil.
  2. In a small mixing bowl, whisk together the garbanzo bean flour, avocado oil, water, and seasonings until smooth.
  3. Pour pizza dough onto baking sheet and spread into an even 8" circle. Bake for 10-12 minutes, or until edges are slightly browned.
  4. Remove from oven and let cool.
Vegetarian Pizza Toppings
  1. While pizza crust is cooking/cooling, grate cheese, measure out sauce, and chop any veggies you wish to top your pizza with.
  2. Once pizza has cooled slightly, spread sauce evenly over the 8" crust and top with cheese and veggies. Drizzle pizza toppings with avocado oil and sprinkle with preferred seasonings (I chose black pepper).
  3. Bake for another 10-12 minutes, or until veggies are tender and cheese is melted.
Recipe Notes

For a crispier crust, bake longer than the recommended, initial 10-12 minutes.
